El Cazo is a deep copper pot, hand-hammered in Mexico, with a wide rim and a tapered narrower bottom traditionally used over an open fire to make carnitas, chicharrones, cajetas, and an assortment of sweets.
Cazos are integral to traditional Mexican cooking and many elite chefs consider them to be a required tool in their kitchen because of their ability to transfer heat with even distribution and steady intensity throughout the entire cooking surface. Cazos have a rich history throughout Mexico and are often passed down from generation to generation. They can be found all over the country, though they are most famously known in the ‘magical town’ of Santa Clara del Cobre located in the corner of Michoacán. Chef Efren Velasquez is the owner and executive chef of El Cazo. Efren grew up in Chihuahua, Mexico where his mother owned a restaurant. It is from her that he acquired the talent and passion for traditional Mexican cooking. He has spent the last two decades perfecting his skills in the kitchen and is excited to be at the helm of this new Jefferson Park restaurant. The recipes offered on the menu are carefully fashioned by Chef Efren or are passed down from his mother. Chef Efren is renowned for his signature enchilada sauce as well as his green chile. Chef Efren takes great care in his attention to detail while crafting every dish so you can enjoy the rich flavors of his Mexican traditions.
